Good morning everyone, I hope you all are looking forward to a fun weekend camping! Today I’m bringing you a favorite breakfast of mine…grain free waffles.

While Labor Day weekend marked the unofficial end of Summer I’m going to try and squeeze a few more weeks of camping in before the Midwest winter sets in. Fall is my favorite time to camp. The forest areas are so pretty as the leaves begin to change and harvest is in the air. 

Anyway, this weather has me longing for hearty fall dishes. So expect to be seeing more chili and pumpkin soon.

Waffles Are One of My Favorites

When I was a kid my dad took a job in a new state, and in the process of moving we stayed in a extended stay hotel for a few weeks. It was THE BEST! Every morning we’d go down to breakfast and the hotel had a waffle iron. They always had strawberries dripping in a sugary syrup (that you know was not naturally that red) and a great big can of whipped topping. This was pretty much my dream breakfast. Fast forward a bit and grown up me still loves waffles, just a healthier version. Believe me you won’t even know the difference, except in how you feel after eating them!

This little Dash waffle iron we bought has been blowing up my social media feed. I swear I bought mine before it was cool! I loved the size of it, the biggest problem is that if you are making these for a large group it can get a little tedious but definitely worth the effort. If you haven’t been able to get your hands on one of these don’t worry, you can make this recipe in a regular waffle iron too, or if you’re cooking over a fire, you can use it in one of the campfire waffle irons, just make sure too use enough batter.

What You’ll Need for These Grain Free Waffles

What I love about this recipe is the simple ingredients and prep.

  • Almond flour
  • Coconut flour
  • Baking powder
  • Eggs
  • Coconut milk
  • Maple syrup
  • Cinnamon (optional) 

Making These Waffles is Quick & Easy

Mix up the dry ingredients well, making sure to remove all the clumps. (You can do this ahead of time, its like having a premade mix!) we take ours in an airtight container like this.

Add your wet ingredients when you are ready to make your waffles.

Whisk until well combined, being cautious of clumps. Grease your waffle iron according to the manufacturer’s instructions and pour 2-3 tablespoons of batter into the iron, this should fill up a four inch waffle iron perfectly.

Close the iron and cook for 4 minutes.

That’s it! Seriously how simple was that? Stack them high and enjoy.

I like mine with a little butter, some pure maple syrup, and natural sausage links. Not to mention the coffee…but coffee is a must with all breakfasts right?

You can also make these ahead of time and freeze. Just pop them in a toaster and you’ve got an easy quick breakfast you can feel good about. 

This recipe yields 14-16 four inch waffles (less if you use a traditional size waffle iron). You can make a half batch if you don’t need that many or just freeze the leftovers. 

Not a fan of maple syrup? Top these with fresh fruit or homemade whipped cream…or both!

Easy Grain-Free Waffles

These easy, grain free waffles are dairy free, gluten free, paleo, and low carb. They mix up quickly and are the perfect addition to your next camping trip!
Prep Time 15 minutes
Cook Time 4 minutes

Equipment

  • Waffle Iron
  • Mixing Bowl
  • Whisk
  • Meauring Cups & Spoons

Ingredients
  

  • ½ cup Almond Flour
  • ¼ cup Coconut Flour
  • 2 tsp Baking Powder
  • 8 Eggs
  • ½ cup Unsweetened Coconut Milk (or dairy free milk of choice)
  • 1 tbsp Maple Syrup
  • 1 tsp Cinnamon (optional)

Instructions
 

  • Preheat Dash waffle iron.
  • Whisk dry ingredients together to remove all clumps.
  • Mix eggs, milk, and maple syrup in separate bowl. Combining well.
  • Whisk wet ingredients into dry ingredients. Combine well and let batter sit for 2 minutes.
  • Spray Dash waffle iron with oil. Pour 2-3 tablespoons of batter into hot waffle iron. Close iron and set timer for 4 minutes.
  • When the timer goes off, make sure waffles have reached a golden brown appearance. Place finished waffle on cooling rack.
  • Repeat until all the waffles are baked.

Notes

  1. You can mix up the dry ingredients ahead of time and store in an air tight container. This makes whipping up these delicious waffles easy at the campground.
  2. If you don’t have a Dash waffle iron, any iron will work, just make sure to use enough batter.
  3. If you are strict low carb/keto, use a alternative sweetener such as stevia or monk fruit.
