Flavorful Fajitas

It’s finally Fall! I love this time of year when the leaves start to change, tractors are in the fields, and all the different types of squash. However, it often comes with a lot of rain. This is something we’ve been dealing with recently as we try and pack in as many camping trips as we can before the Midwest winter sets in.

While I love a good thunderstorm it’s not always fun at the campground, especially because it makes it hard to cook over the fire. So when the opportunity to get a Blackstone grill came along, I knew it would be perfect for camping and great for days we didn’t want to (or couldn’t) have a fire.

I’ll be sharing more about my experience with the Blackstone soon but for now I wanted to share the first recipe we tried on it…Fajitas!

Why I Love Fajitas

I love fajitas. I think they are a perfect real food meal and while they aren’t a conventional camping food, they were so easy to make that it should be! The great thing about these is whether you have a Blackstone or not you can make them since they cook really well in a fry pan too!

How to Make These Flavorful Fajitas

Start by slicing boneless skinless chicken breasts into strips

(Tip: you can save time by purchasing pre-cut chicken strips. This probably won’t save you money but makes prep time way shorter and this meal much easier)

Season the chicken strips with my Super Simple Taco Seasoning or your favorite taco/fajita seasonings.

Also, slice onions and bell peppers into strips.

Using the Blackstone

Preheat the Blackstone grill or your frying pan and pour a little avocado oil on the surface. On one side cook the chicken and on the other side cook the onions and peppers. (I recommend using different sets of tongs or spatulas to cook these to prevent cross contamination)

If using a fry pan, you will need two different pans to cook the chicken separate from the vegetables. Another one pan option is to cook the veggies first and set them aside while cooking chicken.

Pre-cut chicken strips were much easier than cooking full size chicken breasts and could be coated more evenly with the seasoning.

While the chicken and veggies cook make up a batch of my Creamy Guacamole to have with!

Before removing from the grill, make sure your chicken is cooked thoroughly (consuming raw chicken is a sure way to ruin your camping trip!)

Now it’s time to assemble. We ate these on tortillas and as fajita bowls. Which you choose is up to you, they’re both delicious and versatile.

Be careful not to overload your tortillas – it’s really easy with all these yummy toppings.

I love to make cauliflower rice to have as the base of these fajitas bowls but regular rice is just as good. You can add fresh cilantro and lime to the rice if you have it on hand.

There are a lot of other ways you can customize these fajitas too. Steak or shrimp instead of chicken? Use tofu and make these vegetarian? Leave out the cheese and sour cream for dairy free? Re-fried beans? So many options and all delicious!

These fajitas are packed with flavor. I also loved how simple they were to make and how easy the clean up was. My family loved how they could customize their own plate so easily with whatever they preferred.
