Today is the first day of Summer and to celebrate I’m sharing one of my favorite refreshing drinks. This blended Tropical Coconut Pineapple Fizz recipe will be a hit with adults and kids alike! I love to make up a big batch of these while we’re camping.

To make these tropical drinks you’ll need:
- Fresh or Frozen Pineapple Chunks
- Pineapple Juice
- Unsweetened Coconut Milk
- Carbonated Water
- Ice
- Coconut Rum (This is for an Adults Only version)
Putting it All Together
Place pineapple, pineapple juice, coconut milk, and ice into a blender and blend until smooth.
Divide the mixture equally between 4 to 6 glasses, depending on the size of the glass. Top all the glasses with carbonated water, about a 1/2 cup in each glass. This will create a tasty foam on the top.
Top each glass with a wedge of fresh pineapple and enjoy!
That’s all there is to it! So easy and so fresh.
For the Adults Only Version of Tropical Coconut Pineapple Fizz
If you want to make the grownup version of these Tropical Coconut Pineapple Fizz drinks, pour 2 ounces of Coconut Rum into the glass before dividing the blended mixture.
A Couple of Notes About This Recipe
If you don’t have a blender in your RV (that’s a big appliance to have in a space where storage is tight) you can leave out the fresh pineapple and mix this up over ice instead of blended. It’s just as delicious!

If you have a small, serves-one type blender or food processor you could make these in smaller batches.

Tropical Coconut Pineapple Fizz
Ingredients
- 1 Cup Fresh or Frozen Pineapple
- 1 Cup Unsweetended Coconut Milk
- 6 Ounces Pineapple Juice
- 2-4 Cups Carbonated Water
- 1 ½ Cups Ice
- Coconut Rum (optional)
Instructions
- Add pineapple, coconut milk, pineapple juice, and ice to a large blender. Blend until smooth.
- Divide mixture into 4-6 glasses.
- Top each glass with ½ to ¾ cup of carbonated water along with a wedge of fresh pineapple.
