Iced Pineapple Coconut Matcha Tea drink

Good morning friends! I hope you all are staying healthy! The official start of spring is just a few days away and I for one could not be more excited. With all the craziness going on right now I think we all could use something to look forward too.

As the weather (hopefully) gets warmer, I’m often looking for something refreshing and healthy to drink. While a lot of restaurants have new spring drinks, I don’t always want to go out and buy something, especially if I’m hanging out at the campground. That’s where this homemade Iced Pineapple Coconut Matcha Tea became my mission. This spring drink only has a few grams of sugar from pure pineapple juice and is something I can enjoy at home while we are stuck inside over the next few weeks.

For Iced Coconut Pineapple Matcha Tea You’ll Need

These iced coconut pineapple matcha drinks are so easy to make. I mixed mine in a blender to make it simple but you can easily just shake it with a protein shaker. The matcha doesn’t mix in as easily if shaken but it does dissolve so don’t get discouraged.

To make, just pour coconut milk, pineapple juice, matcha powder and ginger into your blender cup. If you prefer it a little sweeter, feel free to add your choice of sweetener, but I don’t think you will need much.

Mix until fully combined.

Pour over ice and enjoy! I loved how perfectly it fit in these pint size Ball jars with these Ball lids and straws!

See how easy that was? I love how simple this recipe is and so refreshing. It also doesn’t leave me with a sugar crash after I drink it. The coconut and pineapple really work well together to create a refreshing and tropical base for the matcha in this drink.

Ingredients
  

  • ½ tsp Jade Leaf Matcha Powder
  • 8 ounces Unsweetened Coconut Milk
  • tsp Ground Ginger
  • 3 Tbsp 100% Pineapple Juice
  • ½ – 1 tsp Pyure Organic Stevia Blend or Your Favorite Sweetener (optional)

Instructions
 

  • Put all ingredients into a blender cup or protein shaker and mix until fully combined
  • Pour over ice and enjoy!
