My Favorite Simple “Sandwich”

Good morning! I hope you all are busy planning your weekend camping trips. Unfortunately I am not camping this weekend but that isn’t stopping me from planning my next outing. Although I’m not camping this weekend I do I have a great, easy meal for you to try…my favorite pepper sandwich!

Eating at the Campground

When my family pulls into the campground on a Friday night it’s usually getting late by the time we finish setting up. I’m sure you all can relate to this. In a previous life we would order a pizza or get take-out (sometimes we do this anyway since we like to try local restaurants in the areas we travel to) but we try to avoid eating out as much as possible once we get to the campground. In trying to stay away from the “take-out is easy” trap we had to come up with a simple easy meal that had lots of flavor but didn’t take a lot of work.

Whole wheat tortilla wraps quickly became a favorite in our camper. Unfortunately I’m not a big fan of gluten free tortillas for wraps, so I inevitably ended up eating the meat, cheese and vegetables on a plate. The more we did this though the more adventurous I became with finding a sandwich substitute that satisfied my desire to pick it up and eat it while still keeping it gluten free and tasty. After several failed “bun” alternatives I discovered peppers are perfect for this!

What You’ll Need for this “Sandwich”

You can see here what I used in mine:

  • Cheese Slices
  • Turkey & Ham Lunch-Meat
  • Cucumbers
  • Lettuce
  • Bell Pepper

This is just to give you an idea for fillings. You can easily change, eliminate or add whatever YOU prefer in a sandwich to this to make it your own.

When choosing lunch-meat there are a lot of options out there that would not be considered “real food.” Availability varies, so be careful and read your labels to make sure you are buying the cleanest option you can.

There are so many other toppings you could add too! Avocado, mayo, mustard, uncured salami, tomatoes, onions or whatever your favorite veggie is! The sky’s the limit with this sandwich. You can also easily make this Paleo by leaving off the cheese slices. If it gets to thick, try it open face using only one half the pepper, it won’t be as easy to hold but might be thinner to bite!

I layer all the ingredients together between two halves of a sweet bell pepper. A red or yellow pepper work best for this. Although green bell peppers are delicious, I find that the sweetness of a red or yellow pepper really adds to the overall flavor.
