Breakfast Burrito Bowls, easy, paleo, and low carb

I hope you all have been enjoying these wonderful Fall days. Winter is right around the corner here in the Midwest (which explains the couple inches of snow on my car yesterday). While I do love this time of year, especially with the holidays coming, I’m sad to see the end of camping season around here.

When we are camping, breakfast is one of our hardest meals. We usually eat kind of late in the morning so it’s more like brunch, but we don’t always want to cook a lot. This is especially true if we are traveling and want to get on the road. Before we changed our lifestyle, breakfast cereal (and not the healthy kind) was our meal of choice while at the campground. I mean you can’t deny how easy that is. Although I know there are healthy cereal options out there, finding a gluten free one that I like has been a trick, but I keep trying! Because of this, we’ve had to get a little more creative and one of our staple easy breakfasts are these breakfast burrito bowls.

About This Recipe

The hardest part of making these (and the most time consuming) is chopping the veggies and cooking the sausage. This is easily done ahead of time if you don’t like cooking in the mornings or will be hitting the road early. This little bit of prep ahead of a trip has been such a great time saver for us and made sure that we continued to eat healthy. On my last road trip, I had a day where I was cooking in the morning and decided to double my batch of sausage and veggies to put away for later in the week when I knew time might be an issue.

You’ll Need

  • 12 ounce package of ground breakfast sausage
  • 1 Large onion
  • 1 Large sweet bell pepper
  • Eggs
  • Sour Cream (optional)
  • Salsa (optional)
  • Cheddar Cheese (optional)
  • Tortillas

To Make These Breakfast Burrito Bowls

Start by chopping the onions and peppers and add them to a hot pan with a little oil over medium heat. Add in your breakfast sausage of choice. You can make these Whole 30 compliant by using a Whole 30 approved sausage.

While the sausage cooks, scramble up some eggs for everyone – I usually figure 2 per person. If you don’t like eggs these can easily be left out but I like to have the extra protein. When the sausage is almost done, pour the eggs in a separate pan and cook thoroughly.

Now comes the fun part! If making a burrito bowl add a serving of sausage into the bottom and top with eggs. Then pile on your favorite burrito toppings like cheese, salsa, sour cream, and avocado.

If you are making a burrito, make sure to go easy on the fillings or the tortilla might split! Still totally edible (speaking from experience) but kinda messy! My family uses whole grain flour, corn, or low carb tortillas with this depending on what we have. Needing gluten free, I am currently LOVING Siete’s almond flour tortillas!

This meal is pretty easy and filled with great flavors. Its not quite as quick as cereal but certainly leaves me feeling a lot better and I don’t get as hangry as the day goes on.

I will admit that besides these breakfast burritos one of my favorite things to do for breakfast, especially if I don’t feel like cooking, is track down a local bakery or cafe. They don’t always have gluten free options for me, and it probably doesn’t qualify as “real food” in most people’s book, but I love supporting local businesses and I can always get a decent cup of coffee. If they have gluten free baked goods that’s just icing on the cake (no pun intended)

  • Cast Iron Pan (Large)
  • Cast Iron Pan (Medium
  • Cutting Board & Knife

Ingredients
  

  • 12 Oz Ground Sausage
  • 1 Large Onion
  • 1 Large Bell Pepper
  • Cheddar Cheese (Optional)
  • Salsa (Optional)
  • Sour Cream (Optional)
  • Tortillas (Optional)

Instructions
 

  • Roughly chop onions and bell pepper
  • Add a little oil to large cast iron pan over medium high heat
  • When pan is hot, add sausage, onion, and bell pepper to the pan, mixing frequently
  • While sausage cooks, scramble eggs
  • When sausage is nearly cooked, start heating second pan with some butter or oil
  • Add eggs to second pan, stiring to prevent burning
  • When eggs and sausage are both fully cooked, assemble burrito bowls with your favorite toppings
  • Enjoy!
