Campfire Chili

This warm and hearty chili is perfect cold weather camping food.

Ingredients
  

  • 2 lbs Ground Beef
  • 2 Medium Onions
  • 1 28 oz Can Crushed Tomatoes,
  • 1 15 oz Can Diced Tomatoes
  • 24 oz Chicken or Beef Broth
  • 1 Can Black or Kidney Beans
  • 8 oz Bag of Frozen Sweet Corn
  • 3 Tbsp Avocado Oil (for the pan)
Spices
  • 1 Tbsp Paprika
  • 3 Tbsp Cumin
  • 6 Tbsp Chili Powder
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Salt
  • ½ Tbsp Pepper
  • 1 tsp Cayenne Pepper (optional)

Method
 

  1. Chop onion into ½ inch pieces. Heat dutch oven over fire or grill with avocado oil in the bottom. Once hot, add ground beef and onion.
  2. When ground beef is cook thoroughly, add all ingredients except corn.
  3. Cook chili for at least one hour. Stir frequently to prevent sticking.
  4. When chili has been heated thoroughly and you are almost ready to serve, add the sweet corn and bring back to a boil.
  5. Serve chili hot with side of corn bread and toppings

Notes

If you like your chili on the spicier side, the cayenne pepper gives it a nice kick.
