Good Morning! I hope you all had a nice relaxing weekend. I spent the weekend at the campground enjoying some fresh air and catching up on some work…and much needed sleep! The Midwest heat and humidity made it a little warmer than I like for sitting around a fire but not unbearable. Today I want to bring you one of my favorite recipes, creamy guacamole! This recipe is so simple you won’t believe it packs so much flavor.
What You’ll Need
- 3 Medium Avocados
- 1 Medium Onion
- 1 Roma Tomato
- 2 Jalapenos
- Juice from 1 Lime
- Salt
Fellow avocado lovers will understand how excited I was about how fresh this avocado was! This made it the perfect base for my creamy guacamole.
To Make This Creamy Guacamole
Chop the avocados and mash well with the lime juice. It’s best to do this step first.
Chop the onion, jalapenos, and tomato and add to the avocado.
Mix well and salt to taste.
That’s it! How simple is that to whip up? It is really easy to make this up at the campsite with minimal dishes and lots of flavor.
So Many Options
One of the great thing is that none of the ingredients have to be cold before you make it so its easy to take if you are tent camping or RVing! (I recommend storing the finished guacamole in a cooler or refrigerator though). Plus any of the ingredients (expect avocados) can easily be omitted. If you don’t like the heat, skip the jalapeno. No fresh tomato? Leave it out!
Favorite Ways To Eat This Creamy Guacamole
We love to eat ours on organic corn tortilla chips, Siete grain free chips, or homemade cheese crisps. Really though this guacamole is a great addition to many foods like hamburgers, fajitas (recipe coming soon!), buffalo chicken, eggs, toast, or just as a healthy snack!
